Plum Streusel Loaf - cooking recipe

Ingredients

    2 tbsp flour
    2 tbsp butter, finely chopped
    1/4 cup packed brown sugar
    1/4 cup slivered almonds, coarsely chopped
    2 tbsp rolled oats

    12 tbsp (1 1/2 sticks) butter, chopped, at room temperature
    3/4 cup granulated sugar
    3 None eggs
    1 cup self-rising flour
    1/2 cup flour
    1/3 cup milk
    1 can (15 oz) plums, drained, pitted and halved
    None None Whipped cream, to serve (optional)
Preparation
    Preheat the oven to 325\u00b0F. Grease and line an 9 x 4 inch loaf pan with parchment paper, extending the paper over long sides for handles.
    For the streusel, sift flour into a medium bowl. Rub in butter using fingertips until crumbly. Stir in remaining ingredients. Set aside.
    Beat butter and granulated sugar in a large bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition until well mixed. Stir in combined sifted flours then milk until well blended. Spoon into the prepared pan, smoothing top.
    Arrange plums, cut side up, on top of cake, pressing down gently. Sprinkle evenly with streusel topping.
    Bake 55-60 mins, until toothpick inserted into center comes out clean. Cool in pan 15 mins. Remove from pan; completely on wire rack. Serve with whipped cream, if desired.
