Honey Mustard Chicken Salad - cooking recipe

Ingredients
    1/2 None baguette, thinly sliced
    1/4 cup olive oil + 2 tbsp
    1 lb skinless chicken breast
    1 None avocado, pitted, peeled, chopped
    1 small head celery, thinly sliced
    1/2 None red onion, sliced
    1/4 cup cider vinegar
    2 tbsp honey
    1 tbsp whole-grain mustard
Preparation
    Preheat oven to 350\u00b0F. Arrange bread in single layer on a baking sheet. Drizzle with 1 tbsp oil and season. Bake for 6-8 mins, until crisp and golden.
    Meanwhile, heat grill pan over medium heat. Brush chicken with 1 tbsp oil and season to taste. Cook for 5-6 mins per side, until cooked through. Let rest for 5 mins. Slice thinly.
    Combine avocado, celery and onion. Whisk remaining ingredients together. Season then toss with salad. Serve topped with chicken and croutons.
