9 tbsp butter, at room temperature, chopped
1/2 cup brown sugar
1 large egg
1/2 cup self-raising flour
2/3 cup chopped walnuts
1 3/4 cups puffed rice cereal
1/3 cup chopped dried apricots
1/3 cup dried cranberries
Preparation

Preheat oven to 350\u00b0F. Lightly grease two baking trays.
Using an electric mixer, beat butter and sugar together in a bowl until smooth. Add egg and beat well. With a wooden spoon, mix in the remaining ingredients until well combined.
Roll tablespoonfuls of the dough into balls and place onto prepared baking trays. Flatten slightly with a floured fork.
Bake for 12-15 minutes or until golden. Cool on trays.
