Pancakes With Poached Berries - cooking recipe

Ingredients
    2 1/4 cups all-purpose flour
    3 tsp baking powder
    2 tbsp granulated sugar
    3/4 cup milk
    2 None eggs
    6 1/2 tbsp butter, melted
    None None Poached Berries
    1/2 cup granulated sugar
    3.5 oz raspberries
    3.5 oz blueberries
    2 oz strawberries, hulled, quartered
    1 tsp vanilla extract
    None None heavy cream or yogurt, to serve (optional)
Preparation
    Sift flour and baking powder into a large bowl. Add sugar. Whisk together milk, eggs and 4 1/2 tbsp butter then whisk into dry ingredients. Cover and set aside for 15 mins.
    Meanwhile, to make poached berries, bring 1/2 cup water and sugar to a boil. Add berries. Cook for 1 min. Strain liquid into a clean saucepan. Simmer for 15-20 mins, until syrupy. Let cool slightly then add berries and vanilla.
    Heat a large nonstick frying pan over medium heat. Brush with butter. Pour 1/4-cupfuls of batter into pan and cook for 2-3 mins, until bubbles appear on the surface. Flip and cook for another 1-2 mins, until golden. Cover to keep warm. Repeat with remaining butter and batter.
    Serve pancakes in a stack, drizzled with poached berries and heavy cream or yogurt, if desired.
