Cucumber, Salmon And Eggplant Canapés - cooking recipe
Ingredients

1 None small eggplant, peeled, cut into 1/4 inch cubes
1/4 cup extra-virgin olive oil
12.5 oz salmon, skin removed, deboned, cut into 1/4 inch cubes
1 None small avocado, peeled, pitted, cut into 1/4 inch cubes
1 tbsp grated fresh ginger
1/4 cup light soy sauce
1 None cucumber, cut into 24 slices
2 oz shallots, peeled, finely sliced
Preparation

Steam eggplant for 15 mins, or until tender. Transfer to a medium bowl, add oil and toss to coat. Let cool.
Once eggplant is cool, add salmon, avocado, ginger and soy sauce and toss to combine. Season. Spoon onto cucumber slices then sprinkle with shallots.
