Tempura Fish With Noodle Salad - cooking recipe

Ingredients
    2 None frozen tempura fish fillets
    9 oz thin Hokkien noodles
    1 None medium carrot, cut into thin matchsticks
    3 oz snow peas, trimmed, thinly sliced lengthwise
    1/2 None small red pepper, cut into short strips
    3 tbsp fresh cilantro leaves
    1 tbsp sweet chili sauce
    2 tsp ketjap manis (sweet soy sauce)
    None None lemon wedges, to serve
Preparation
    Preheat oven to 450\u00b0F. Line a baking tray with parchment paper. Place fish on tray and bake for 16-17 mins, or until golden brown, turning halfway through cooking.
    Soak noodles in boiling water for 1 min. Stir to separate strands then drain. Transfer to a large bowl along with carrot, snow peas, red pepper and cilantro.
    Whisk together chili sauce and ketjap manis. Drizzle over salad and toss to combine. Distribute between serving plates and top with fish. Serve with lemon wedges.
