Chicken Scampi - cooking recipe

Ingredients
    4 tbsp olive oil
    3 None bell peppers, chopped
    1 None small red onion, sliced
    1 1/2 lb boneless, skinless chicken breasts
    1/2 cup chopped Spanish onion
    1 tbsp minced garlic
    1 cup chicken stock
    1 (1.6 oz) package garlic and herb sauce mix, like Knorr
    1/2 cup milk
    1/4 tsp red pepper flakes
    1 tbsp lemon juice
    4 tbsp chopped fresh basil leaves
    4 tbsp chopped fresh parsley leaves
    1 lb angel hair pasta, cooked
Preparation
    In a large frying pan, heat 2 tbsp olive oil over medium heat. Cook peppers and red onion for 5 mins, until softened. Remove from heat and set aside.
    Season chicken. Add remaining oil to pan. Cook chicken for 4 mins per side, or until cooked through. Remove from heat and set aside.
    Add Spanish onion and garlic to pan. Cook for 2 mins. Add chicken stock, sauce mix and milk. Bring to a boil and cook for 2 mins, until sauce thickens. Season and add red pepper flakes, lemon juice and 2 tbsp mixed herbs. Return chicken to sauce to warm through. Serve over pasta with sauteed vegetables. Garnish with remaining herbs.
