Eggplant, Spinach And Pepper Panini - cooking recipe

Ingredients
    1/3 cup olive tapenade
    4 small rolls Italian bread, halved
    3.5 oz baby spinach
    1 tbsp baby capers, drained, rinsed
    1 None roasted red pepper, cut into strips
    5.25 oz marinated eggplant, drained
    3.5 oz mozzarella cheese, grated
Preparation
    Preheat a sandwich press. Spread tapenade over base of each roll then fill with spinach, capers, pepper, eggplant and mozzarella. Cook for 3-4 mins, until golden. Cut in half and serve.
