Scallop And Bacon Soup - cooking recipe

Ingredients
    2 tbsp olive oil
    12 oz potatoes, chopped
    6 oz bacon, chopped
    2 None medium leeks, sliced
    3.5 oz green beans
    1 None large zucchini, sliced
    5 cups fish stock
    1/2 cup fresh flat-leaf parsley leaves, plus extra to garnish
    6 oz scallops
    8 oz mussels
    None None crusty bread, to serve
Preparation
    Heat olive oil over high heat. Cook potatoes for 2 mins. Add bacon and cook for another 2 mins. Add leeks, green beans, zucchini, fish stock and parsley. Season. Simmer for 12 mins, until tender.
    Add scallops and mussels and cook for 5 mins, until cooked through. Garnish with parsley and serve with crusty bread.
