Grilled Whiting Fillets With Beurre Blanc - cooking recipe

Ingredients
    1 None spring onion, trimmed, finely chopped
    1/2 cup dry white wine
    1 pinch white pepper
    7 tbsp unsalted butter, cut into 6 chunks, plus 2 tbsp melted
    1 tsp lemon juice
    8 None whiting fillets
    None None Steamed green vegetables, to serve
Preparation
    Place green onion, wine and white pepper in a small saucepan. Simmer 10-12 minutes, until liquid has reduced to about 1 tablespoon. Strain; discard solids.
    Return liquid to a clean, small saucepan on medium heat. Whisk in 7 tbsp butter, 1 piece at a time, until all butter is incorporated and sauce is creamy and slightly thickened.
    Remove from heat; whisk in lemon juice. Season to taste.
    Preheat outdoor grill or grill pan to hot.
    Brush whiting with melted butter. Grill 3-5 minutes each side, until cooked through.
    Serve whiting drizzled with sauce; accompany with steamed vegetables.
