Apricot And Almond Meringue Bars - cooking recipe

9 tbsp butter, at room temperature
1/4 cup sugar
1 large egg, separated
1/3 cup all purpose flour
1 tsp baking powder
1 cup apricot jam
2/3 cup powdered sugar
1/3 cup slivered almonds

Preheat oven to 350\u00b0F. Line a 12 x 8 inch brownie pan with parchment paper, extending paper at long sides for handles. Using an electric mixer, beat butter and sugar in a small bowl until light and creamy. Add egg yolk and beat until combined. Sift flour and baking powder over butter mixture and stir until combined.
Press dough evenly into base of prepared pan. Spread jam evenly over dough.
Using an electric mixer, beat egg white in a small bowl until soft peaks form. Add shifted powdered sugar and beat until well combined and stiff. Spoon on to jam, then gently spread with a spatula. Sprinkle with almonds.
Bake for 20-25 minutes or until light golden and crisp to touch. Cool in pan. Transfer to a cutting board and cut into 16 pieces. Serve.
