Ingredients

7 tbsp butter, softened
1/3 cup granulated sugar
1 tsp vanilla extract
1 None medium egg
3/4 cup self-rising flour, sifted
1/3 cup all-purpose flour, sifted

1 3/4 cups desiccated coconut
7 oz candied cherries, chopped
3/4 cup buttermilk
1/4 cup granulated sugar
2 tbsp self-rising flour
3 oz dark chocolate, melted, to decorate
Preparation

Preheat oven to 350\u00b0F. Lightly grease and line an 8 inch square cake pan with parchment paper.
Beat butter, sugar and vanilla together until pale and creamy. Beat in egg. Fold in flour then press mixture evenly and firmly into pan.
To make the topping, combine all ingredients in a large bowl. Spread over base. Bake for 40-45 mins. Let cool in pan then drizzle with chocolate. Chill until chocolate is set then cut into squares. Store in an airtight container.
