Pork Chops With Sausage And Kale - cooking recipe

4 1/2 lb kale, chopped
2 3/4 lb small potatoes
6 tbsp butter
3 None medium onions, peeled and diced
4 cups vegetable stock
3 1/3 lb pork chops
6 None sausages
4 tbsp rolled oats
1/4 cup granulated sugar
Preparation

Blanch the kale in boiling water for 4 mins, working in batches if necessary. Drain. Cook the potatoes in boiling salted water for 15 mins. Drain and rinse in cold water.
For the kale and sausage, heat 3 tbsp butter in a large saucepan and saute the onions until softened. Add the stock, kale and pork chops. Bring to a boil, cover and cook for 1 hour. Remove the pork from the pan and set aside. Simmer the kale for another 10 mins. Add the sausages and cook for 10 mins. Add the oats and cook for 10 mins. Add the pork back to the pan and cook for 2 mins.
To finish the potatoes, heat 3 tbsp butter in a large frying pan. Fry the potatoes, turning, until golden brown. Season. Sprinkle in the sugar and cook until caramelized.
Remove the pork from the pan and slice. Arrange on serving plates with the kale, sausages and potatoes.
