Tofu And Barley Salad - cooking recipe

Ingredients
    7 oz pearl barley
    7 oz flavored tofu, finely chopped
    2 large stalks celery, thinly sliced
    2 oz pea shoots, leaves picked, stems finely chopped
    1 None small red pepper, chopped
    2 oz baby spinach
    1/2 cup creamy Caesar dressing
Preparation
    Cook barley in boiling, salted water for 40 mins, or until tender. Rinse under cold water until cool then drain.
    Transfer barley to a large bowl and toss with remaining ingredients. Season. Serve.
