Hot Smoked Trout And Noodle Salad - cooking recipe
Ingredients

7 oz dried rice vermicelli noodles
1/3 cup lime juice
1 tsp chili oil
1 tbsp sesame oil
2 tbsp fish sauce
1 clove garlic, minced
14 oz hot-smoked trout fillets, skin and bones removed, flaked into large pieces
2 stalks celery, thinly sliced
2 None cucumbers, deseeded, thinly sliced
1/2 cup toasted pistachios
2 tbsp roughly chopped fresh Thai basil leaves
2 tbsp roughly chopped fresh mint leaves
Preparation

Place noodles in a large heatproof bowl. Cover with boiling water and let stand until just tender. Rinse under cold water until cool then drain.
Meanwhile, to make dressing, whisk together lime juice, chili oil, sesame oil, fish sauce and garlic.
Place fish in a large serving bowl. Add noodles, celery, cucumbers, nuts and herbs. Pour dressing over salad and toss gently to combine.
