One Dish Peppers And Beans - cooking recipe

Ingredients
    2 tbsp oil
    1 None each red and green pepper, seeded and cut into strips
    1 None onion, finely diced
    1 can (15 oz) red kidney beans, drained and rinsed
    1 can (15 oz) sweet corn, drained
    1/4 cup vegetable stock
    2/3 cup tomato sauce
    1 pinch paprika
    1 pinch red pepper flakes
    1/2 bunch chives, chopped
    3/4 cup sour cream
Preparation
    Heat oil in a large skillet on medium heat. Add peppers and onions and cook, stirring, for about 8 mins. Add kidney beans and corn and cook for about 3 mins. Add vegetable stock and tomato sauce and bring to a boil. Add a pinch of sugar, paprika and red pepper flakes. Season to taste.
    Stir chives into sour cream and season to taste. Serve pepper mixture with sour cream and tortilla chips on the side.
