Ham And Cheese Pinwheels - cooking recipe

Ingredients
    6 None large eggs, lightly beaten
    2 1/4 cups self-rising flour
    1 tbsp sugar
    2 1/2 tbsp butter
    3/4 cup skim milk
    1/3 cup tomato puree
    6.5 oz sliced ham, cut into thin strips
    4 oz low-fat Cheddar cheese, grated
Preparation
    Preheat oven to 400\u00b0F. Grease a 7x11 inch rimmed baking tray.
    Oil a frying pan and place over low heat. Cook eggs, stirring constantly, until scrambled. Set aside.
    Sift flour and sugar into a medium bowl. Cut in butter until mixture resembles coarse breadcrumbs. Stir in milk and mix until just combined. Turn out onto a floured work surface and knead until smooth. Roll into a 12x16 inch rectangle.
    Spread tomato puree over dough. Arrange ham and scrambled eggs over top and sprinkle with cheese. Season. Starting from long side, roll dough up firmly. Trim ends. Cut into 12 slices. Arrange pinwheels, cut-side up, in a single layer on prepared tray. Bake for 30 mins, or until browned.
    Serve warm or cold.
