Baked Lemon Potatoes - cooking recipe

4 1/2 lb potatoes, peeled, cut into wedges
4 None lemons, juiced
3/4 cup extra-virgin olive oil
2 tbsp fresh oregano leaves, plus extra to serve
Preparation

Preheat oven to 400\u00b0F.
In a large bowl, combine potatoes, lemon juice, 1/2 cup oil and oregano. Season to taste and toss to combine. Arrange, in a single layer, in a large baking dish. Add enough water to just cover potatoes. Bake for 1 hour, or until liquid has evaporated. Drizzle with remaining oil and bake for 10-15 mins, until golden brown.
Serve sprinkled with fresh oregano.
