Gnocchi With Spinach And Prosciutto - cooking recipe

1 pkg (20 oz) gnocchi
1 tub (8 oz) mascarpone cheese
6 oz sliced prosciutto, cut into strips
6 oz baby spinach
8 oz cherry tomatoes, halved
1/3 cup grated Parmesan cheese
Preparation

Preheat the broiler. Cook gnocchi in a large saucepan of boiling, salted water according to package directions. Drain and transfer to a large, greased baking dish.
Add mascarpone, prosciutto, spinach and tomatoes. Toss to combine. Season with pepper and sprinkle with Parmesan cheese.
Broil for 4-5 mins, until cheese has melted and top is golden.
