Beef, Chinese Cabbage And Herb Salad - cooking recipe

1 tbsp vegetable oil
10 oz beef stir-fry strips
1/2 small Chinese cabbage, finely shredded
1 None fresh long red chili pepper, thinly sliced
3/4 cup roasted peanuts, coarsely chopped
4 oz baby spinach leaves
1 cup firmly packed fresh mint leaves
1/2 cup firmly packed fresh Vietnamese mint leaves
None None FOR THE TAMARIND DRESSING
1 1/2 tbsp tamarind puree
1/2 cup brown rice syrup or maple syrup
2 tbsp fish sauce
2 tbsp lime juice
Preparation

Heat the oil in a wok on high heat. Stir-fry the beef for 3 mins or until cooked through. Transfer to a large bowl; cool slightly.
Meanwhile, for the tamarind dressing, whisk all ingredients in a medium bowl until combined.
Add the Chinese cabbage, chili pepper, peanuts, spinach, herbs and dressing to the beef; toss gently to combine.
