Australian Anzac Cake - cooking recipe

8 tbsp (1 stick) butter, chopped
9 tbsp golden syrup (or use 6 tbsp corn syrup and 3 tbsp molasses)
2 1/2 cups self-rising flour
1/2 cup flaked coconut
1/4 cup sugar
1 cup milk
2 None eggs
None None FOR THE HONEY ICING
1/2 cup powdered sugar, plus additional for dusting
4 tbsp (1/2 stick) butter, melted
1 tsp honey
1 tsp vanilla extract

Preheat the oven to 350\u00b0F. Grease a foil-lined 11 x 7 inch baking pan, extending the foil over long sides for handles.
Place butter and golden syrup in a saucepan on low heat. Stir until smooth.
Mix flour, coconut and sugar in a large bowl. Stir in butter mixture. Gradually stir in combined milk and eggs until smooth. Pour mixture into prepared pan.
Bake for 25-30 mins until a toothpick inserted into the center comes out clean. Cool in pan 10 minutes. Remove from pan; cool completely on a wire rack.
Meanwhile, for the honey icing, mix powdered sugar, butter, honey, vanilla and about 1 tbsp hot water to make thick, spreadable icing. Spread icing over cooled cake. Cut into squares.
