Cheese Puffs - cooking recipe

8 tbsp (1 stick) unsalted butter, cut into cubes
1 tsp sugar
1/2 tsp salt
1 cup flour, sifted
5 None eggs
5 oz Gruyere or Swiss cheese, grated
1 None egg, lightly beaten, to glaze
Preparation

Preheat the oven to 400\u00b0F. Lightly grease 2 baking pans.
Heat the butter, sugar and salt with 1 cup water in a medium saucepan on medium heat. Bring to a boil. Remove from the heat.
Add the flour and stir vigorously with a wooden spoon. Return to the heat and continue stirring for 5 mins, until the mixture comes away from the side of the pan.
Transfer to a bowl and cool slightly. Using an electric beater, add the eggs, one at a time, beating well after each addition. Beat on low speed for 3 mins, until the mixture is smooth and holds its shape. Stir in cheese.
Spoon the mixture into a pastry bag fitted with a 1/2-inch plain tip. Pipe 36 rounds onto the prepared trays, leaving space for spreading. Brush with beaten egg.
Bake for 20 mins. Reduce the oven temperature to 375\u00b0F. Bake for 10 mins, until golden and crisp. Serve.
