Sweet Chili Pork In Lettuce Cups - cooking recipe

Ingredients
    2 tbsp peanut oil
    14 oz ground pork
    4 cloves garlic, crushed
    1/2 cup brown sugar
    1/3 cup fish sauce
    4 None kaffir lime leaves, shredded
    1/4 cup cilantro leaves
    2/3 cup unsalted peanuts, coarsely chopped, roasted
    2 tbsp fried shallots, plus extra to serve
    1 None long red chili, thinly sliced
    8 None iceberg lettuce leaves
    None None lime wedges, to serve
Preparation
    Heat oil in a wok or large frying pan on high. Stir-fry pork and garlic for 4-5 mins, breaking up lumps with the back of a spoon, until browned.
    Add sugar, fish sauce and lime leaves. Simmer for 3-4 mins, or until thickened slightly.
    Add cilantro, peanuts, shallots and chili. Stir-fry for a further 3-4 mins.
    Spoon into lettuce cups. Sprinkle with extra fried shallots. Serve with lime wedges.
