Chicken And Avocado Subs - cooking recipe

Ingredients
    1 lb ground chicken
    1 cup fresh breadcrumbs
    1 None egg, lightly beaten
    2 tsp Dijon mustard
    2 tsp thyme leaves, chopped
    1 small Granny Smith apple, peeled and grated
    1 small carrot, grated
    1 small onion, grated
    1 tbsp olive oil
    8 None sub rolls, split
    2 cups arugula leaves
    2 None avocados, sliced
    3/4 cup drained sun-dried tomatoes
    None None Potato chips, to serve
    None None Mayonnaise, to serve
Preparation
    Combine ground chicken, breadcrumbs, egg, mustard and thyme in large bowl.
    Squeeze excess moisture from apple, carrot and onion. Add to chicken mixture; mix well. Season to taste. Roll heaped tablespoonfuls of mixture into 24 small, flattened patties. Arrange on a tray. Refrigerate until required.
    Heat oil in a large skillet on medium heat. Cook patties, in two batches, 3-4 mins each side, until golden and cooked through. Drain on paper towel.
    Fill each roll with 3 patties. Top evenly with arugula, avocado and tomato. Serve with potato chips and mayonnaise.
