Potato And Leek Gratin - cooking recipe

Ingredients
    6 medium potatoes, peeled and thinly sliced
    2 medium leeks, washed and thinly sliced
    1 1/2 cups heavy cream
    1/4 cup vegetable stock
    1 clove garlic, thinly sliced
    1 None egg
    1/2 cup fresh breadcrumbs
    1/3 cup grated Parmesan cheese
    1/4 cup chopped parsley
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease a 6-cup baking dish.
    Place potato, leek, cream, stock and garlic in a large saucepan on medium heat. Bring to a boil. Reduce heat to low and simmer for 10-12 mins, until potatoes are tender.
    Using a slotted spoon, remove vegetables from cream mixture and layer in prepared dish. Whisk egg into cream and season to taste. Pour over vegetables.
    Mix breadcrumbs, cheese and parsley in a medium bowl. Sprinkle over vegetables.
    Bake for 25-30 mins, until golden and crisp.
