2/3 cup butter, melted
1 tsp lemon zest, finely grated
1/4 cup lemon juice
1/2 cup milk
1 cup self-rising flour, sifted
1/2 cup sugar
4 None large eggs, at room temperature, separated
8 oz frozen blueberries
None None Powdered sugar, to dust
Preparation

Preheat oven to 350\u00b0F. Grease a 2 quart baking dish. Whisk butter, lemon zest and juice, milk, flour, sugar and egg yolks in a bowl until combined.
Using an electric mixer, beat egg whites in a clean, dry bowl until soft peaks form. Fold half the beaten egg whites into lemon mixture. Fold in remaining egg white until just combined. Spoon into prepared dish.
Sprinkle berries over top of pudding. Put dish in a large roasting pan and pour enough boiling water into pan to reach halfway up side of dish. Bake for 35-40 mins or until just set at center. Remove from oven and carefully remove dish from roasting pan. Serve pudding dusted with powdered sugar.
