Spicy Sausage Pasta - cooking recipe

Ingredients
    1 tbsp extra virgin olive oil
    3 None Italian sausages, casings removed
    1 None large onion, finely chopped
    2 cloves garlic, finely chopped
    2 (13.5 oz) cans chopped tomatoes
    1/4 cup red wine
    1/2 tsp dried chili flakes
    1 handful fresh flat-leaf parsley leaves, chopped
    14 oz rigatoni, penne or other short pasta
    None None grated Parmesan cheese, to serve
Preparation
    Heat oil in a large frying pan over high heat. Cook sausage, stirring to break up, until browned and just cooked through. Set aside.
    Add onion and cook, stirring, until softened. Add garlic and cook, stirring, for 1 min, or until fragrant. Add tomatoes and wine. Simmer, stirring occasionally, for 10 mins, or until thickened. Season. Return sausage to pan along with chili flakes and parsley. Stir until warmed through.
    Meanwhile, cook pasta in salted, boiling water until al dente. Drain, reserving 1/2 cup cooking water. Add pasta to sausage mixture along with cooking water. Toss to combine.
    Serve immediately, sprinkled with Parmesan.
