Ingredients
-
3 None grapefruits, roughly chopped (including skin and seeds)
6 1/2 cups sugar
1/3 cup brandy
Preparation
-
In a food processor, process grapefruits until finely chopped. Combine grapefruit mixture and 4 cups water in a large saucepan. Bring to a boil then reduce heat and simmer, covered, for 30 mins. Transfer to a large bowl, cover and let stand overnight.
Return fruit mixture to saucepan along with sugar. Stir over medium-low heat, without boiling, until sugar has dissolved. Boil, uncovered, stirring occasionally, for 20 mins, or until marmalade wrinkles when placed on a cold plate and you push your finger through it.
Stir in brandy and let stand for 5 mins.
