Four Cheese Pasta With Mushrooms, Spinach And Walnuts - cooking recipe

14 oz penne pasta
2 tbsp oil
1 None leek, chopped
8 oz button mushrooms, sliced
10 oz Mascarpone cheese
2 oz mozzarella, grated
3 oz Parmesan cheese, grated
4 oz blue cheese
4 oz baby spinach
2 oz walnut halves
Preparation

Cook penne according to package instructions. Drain, reserving 1/2 cup cooking water. Return to pan and keep warm.
Heat half the oil in a frying pan on medium. Cook leek 5 mins, stirring, until soft. Add to penne. Heat remaining oil on high and cook mushrooms 5 mins, until golden. Add to penne along with mascarpone, mozzarella, Parmesan, half the blue cheese and the reserved cooking water. Stir in spinach and season. Spoon into an ovenproof dish. Top with walnuts and remaining cheese. Preheat broiler and broil 5 mins, until golden. Serve.
