Lamb Chops With Fries And Lemon Aïoli - cooking recipe

1 pkg (20 oz) frozen French fries
12 None lamb chops, frenched trimmed
1 tsp ground cumin
2 tsp ground coriander
1/2 tsp paprika
2 tbsp plus 2 tsp lemon juice
1 tbsp olive oil
2 wedges preserved lemon peel
1 clove garlic, finely chopped
1/4 cup small fresh cilantro leaves
1/4 cup small fresh mint leaves
1/2 cup store-bought aioli
Preparation

Preheat the oven to 400\u00b0F.
Bake the French fries according to package directions.
Sprinkle lamb on both sides with combined cumin, coriander and paprika; drizzle with 2 tbsp lemon juice. Season.
Heat oil in a large skillet on medium heat. Cook lamb chops for 2 mins each side or until cooked to desired doneness. Cover to keep warm.
For the lemon sprinkle, discard flesh from preserved lemon peel. Rinse under running water; pat dry. Finely chop peel; combine half in a small bowl with garlic and herbs.
For the lemon aioli, add remaining preserved lemon peel and 2 tsp lemon juice to aioli; stir to combine.
Serve lamb with French fries and lemon aioli. Top with lemon sprinkle.
