Spiced Pork Tenderloin With Citrus Potato Smash - cooking recipe

Ingredients
    2 None limes, finely grated rind and juice
    1 None lemon, finely grated rind and juice
    1 tbsp chopped mint
    1 tbsp honey
    1 tbsp olive oil
    1 tsp ground coriander
    1 tsp hot paprika
    1 tsp ground cumin
    750 g pork fillet, trimmed
    1 tbsp vegetable oil
    None None steamed baby carrots and green beans, to serve
    -1 None Citrus potato smash
    1 kg new potatoes, scrubbed
    30 g butter, chopped
    1 None orange, finely grated rind and juice
Preparation
    Combine rind, juice, mint, honey, oil, coriander, paprika and cumin in a large shallow dish. Add pork, turning to coat in the marinade. Cover and chill for 1 hour.
    Heat oil in a large frying pan on medium. Cook pork for 10-15 minutes until cooked to taste.
    Serve pork in slices with Citrus Potato Smash, baby carrots and beans. Drizzle with combined remaining rind, juice and spices.
    Citrus potato smash: Cook potatoes in a large saucepan of boiling water for 10-12 minutes until tender. Drain and return to pan.---
    Lightly mash potatoes with butter. Add half the rind, half the juice and half the spices. Cover to keep warm.
