Mixed Berry Puff Pastry Tarts - cooking recipe

Ingredients
    1 None apple, peeled, cored, finely chopped
    3 tbsp sugar
    10.5 oz frozen mixed berries
    1 tbsp cornstarch, combined with 2 tbsp water to create a slurry
    2 sheets frozen puff pastry, thawed
    2 tbsp ground almonds
    1 None large egg white
Preparation
    Preheat oven to 425\u00b0F. Line a baking tray with parchment paper.
    Combine apple and 2 tbsp sugar in a medium saucepan over medium heat. Cook, stirring, for 2 mins, or until soft. Add berries and cook for 2 mins, or until combined and heated through. Add cornstarch slurry and cook for 1 min, or until mixture boils and thickens slightly. Transfer to a bowl and let cool.
    Cut each pastry sheet in 1/2 to make 4 rectangles. Place 2 pastry rectangles on prepared tray. Sprinkle ground almonds over top, leaving a 1/3 inch border. Spoon berry mixture over top.
    Roll out remaining pastry sheets between 2 sheets of parchment paper to about 1/4 inch thick. Place over berry mixture and crimp edges with a fork to seal. Brush with egg white and sprinkle with remaining sugar. Using a small, sharp knife, cut 10 diagonal slits in pastry. Bake for 25 mins, or until puffed and golden. Let stand for 5 mins. Serve warm.
