Falafel - cooking recipe

Ingredients
    4 oz dried fava beans, soaked overnight, drained, rinsed
    4.5 oz dried chickpeas, soaked overnight, drained, rinsed
    3 tbsp fresh flat-leaf parsley leaves, coarsely chopped
    2 tbsp ground cumin
    2 tbsp ground coriander
    2 tsp salt
    1 tsp baking soda
    1 None small onion, finely chopped
    1 tbsp all-purpose flour
    1 None egg
    None None vegetable oil, for deep-frying
Preparation
    Bring a large pot of water to a boil. Add fava beans and bring back to a boil. Reduce heat and simmer, uncovered, for 5 mins. Drain.
    In a food processor, combine fava beans, chickpeas, parsley, cumin, coriander, salt, baking soda, onion, flour and egg. Process until almost smooth. Shape level tablespoons of mixture into patties and arrange on a baking tray. Cover and chill for 30 mins.
    Heat vegetable oil in a wok. Working in batches, deep-fry falafels until browned. Drain on paper towels.
