Beef Tenderloin With Chermoula (North African Marinade) - cooking recipe
Ingredients

2 tsp grated lemon zest
1 tbsp lemon juice
1 tsp ground cumin
1 tsp ground coriander
2 tsp sweet paprika
1 tsp salt
1/4 cup coarsely chopped fresh flat-leaf parsley
2 tbsp coarsely chopped fresh cilantro
2 tbsp olive oil
1 1/2 lb tenderloin of beef
Preparation

Preheat the oven to 400\u00b0F
Combine the zest, juice, spices, salt, herbs and oil in a large bowl.
Roast the beef, uncovered, for about 30 mins or until cooked as desired. Allow to rest for 10 mins, then remove the string and slice.
Tie the beef with string at 1-inch intervals to keep its shape, then coat the beef in the herb mixture. Place the beef on a wire rack in a baking dish.
Serve the beef with lemon, if desired, and your choice of vegetables.
