Fried Mozzarella - cooking recipe

Ingredients
    8 thick slices white bread, cut into 4 inch discs
    8 None fresh basil leaves
    4.5 oz mozzarella cheese, cut into 1/3 inch slices
    2 tbsp vegetable oil
    1/2 cup all-purpose flour
    1/3 cup Parmesan cheese, freshly grated
    2 None eggs, lightly beaten
Preparation
    Top 4 slices of bread with basil and mozzarella. Top with remaining slices of bread, pressing down to seal.
    In a large nonstick frying pan, heat oil over medium-high heat. Combine flour and Parmesan. Dip sandwiches into flour mixture then beaten eggs. Cook for 3 mins per side, or until golden and crisp. Serve sprinkled with salt.
