Ingredients

8 None medium green apples (around 2 2/3 lb), peeled, cored, quartered
3 None large onions (around 1 1/4 lb), roughly chopped
10.5 oz fresh dates, halved, pitted
1 (2 inch) piece fresh ginger, grated
6 cloves garlic, minced
2 tbsp Madras curry paste
2 3/4 cups light brown sugar
2 1/2 cups malt vinegar
2 tsp kosher salt
Preparation

Combine all ingredients in a large saucepan. Stir over high heat, without boiling, until sugar has dissolved. Bring to a boil then reduce heat and simmer, stirring occasionally, for 2 hours, or until thick.
