Ingredients

1 medium egg
1/3 cup milk
1 oz fresh baby spinach, roughly chopped
2 tbsp sugar
Pinch None salt
1/2 cup whole wheat flour
1/2 tsp baking soda
2 tbsp butter
1 oz walnut halves
1 oz soft dried apricots
1 tbsp honey
2 oz dried coconut
None None small bananas, to serve
1 None syringe of strawberry syrup (optional)
1 None syringe of orange syrup (optional)
Preparation

For the pancakes, place the egg, milk, spinach, sugar and salt in a bowl. Blend until smooth using a stick blender.
Add the flour and baking soda to the blended spinach and whisk to combine.
Heat a small amount of the butter in a small frying pan, pour in enough batter so the pancakes are approximately 2-3 inches in diameter and cook for 1-2 mins each side. Repeat until all of the batter has been used up.
For the star dust balls, place the walnuts, apricots, honey and half of the dried coconut into a bowl and blend using a stick blender. Form into small balls, then roll in the remaining coconut.
Pack into a lunch box with the pancakes, bananas and 2 syringes of the strawberry syrup and orange syrup (if using).
