Floating Islands In Cardamom Cream - cooking recipe

2 None large egg whites
6 tbsp sugar
2/3 cup half and half
2 tsp honey
1/2 tsp ground cardamom
1/2 cup pistachios, roughly chopped

Preheat oven to 325\u00b0F. Grease four 6-oz ovenproof ramekins.
Beat egg whites in a bowl with electric mixer until soft peaks form; gradually add sugar, a tablespoonful at a time, beating until sugar has dissolved between additions.
Spoon into ramekins and smooth tops with a spatula. Place in roasting pan; pour enough boiling water into pan to come halfway up sides of ramekins.
Bake for 12 mins, or until risen by about one-third. Stand for 2 mins.
Meanwhile, combine cream, honey and cardamom in a bowl. Pour on to serving plates; turn floating islands on to cream, sprinkle with nuts.
