Egg-Free Mayonnaise - cooking recipe

Ingredients
    1/4 cup unsweetened soy milk
    1 tbsp lemon juice
    2 tsp Dijon mustard
    3/4 cup sunflower oil
Preparation
    In a large bowl, whisk soy milk, lemon juice and mustard together.
    Gradually add oil in a thin, steady stream, whisking constantly. Continue adding oil until mixture is thick. For a thinner mayonnaise, whisk in 1 tbsp hot water.
    Store in a sealed, airtight jar in the fridge for up to a week.
