Crown Lamb Roast - cooking recipe
Ingredients

1 1/2 cups fresh mint
1 cup fresh parsley
1/2 cup toasted walnuts
2 tbsp grated parmesan cheese
1 None large clove garlic, peeled
1/2 cup olive oil
1 None roast of lamb (about 5 1/2 lbs)
None None crown plums, for garnish
None None orange, for garnish
None None fresh mint, for garnish
Preparation

Heat oven to 425\u00b0F. In a food processor or blender, pulse mint, parsley, walnuts, cheese and garlic 3 times. Add oil. Pulse 5 times or until smooth. Season with 2 teaspoons of salt and 1/2 teaspoon black pepper, if desired. Place lamb in a roasting pan.
Season with 1 teaspoon of salt and 1/4 teaspoon of pepper, if desired. Spread mint mixture evenly over lamb. Roast for 30 mins or until inserted thermometer, not touching bone, reads 140\u00b0F for medium rare. Let it sit for 10 mins before slicing. Garnish with fresh mint and sliced plums and oranges.
