Zucchini Feta Patties With Tomato Salad - cooking recipe

Ingredients
    3 large zucchini
    7 oz feta cheese, finely crumbled
    1/3 cup flour
    5 None green onions, thinly sliced
    2 None eggs, lightly beaten
    2 tbsp chopped fresh mint
    1 tbsp chopped fresh oregano
    2 tbsp olive oil
    None None FOR THE TOMATO SALAD
    4 medium tomatoes, coarsely chopped
    1/2 cup pitted black olives, halved
    1 jar (7 oz) roasted peppers, drained and coarsely chopped
    1 tbsp red wine vinegar
    1 tbsp olive oil
Preparation
    Preheat the oven to 325\u00b0F. Line a baking pan with parchment paper.
    Coarsely grate zucchini. Squeeze out excess moisture from zucchini with paper towels. Transfer to a large bowl. Add cheese, flour, onions, eggs, mint and oregano; mix well. Season.
    Heat oil in a large nonstick skillet on medium heat. Cook level tablespoonfuls of zucchini mixture, in batches, for 5 mins or until browned on both sides and cooked through. Drain on paper towels. Place each batch of patties on prepared pan in oven to keep warm.
    For the tomato salad, toss all ingredients in a medium bowl. Serve zucchini patties with the salad.
