Butter Bean Stew - cooking recipe
Ingredients

330 ml light beer
400 ml vegetable stock
2 medium onions, finely diced
3 cloves garlic, finely chopped
2 None red peppers, diced
2 None chilli peppers, finely diced
1 bunch coriander, chopped
4 tbsp white wine vinegar
2 cans butterbeans, drained
1 tsp smoked paprika
1/2 tsp oregano
2-4 tbsp lime juice
Preparation

Bring the beer, stock, onions, garlic, peppers, and chili to a boil, cover and simmer for about 5 minutes.
Blend the vinegar and most of the cilantro together, leaving some for garnish. Add to the vegetables along with the beans, paprika, oregano, and lime juice. Simmer for about 10 minutes, seasoning with salt and pepper.
Serve with a garnish of the remaining cilantro.
