Chilled Cucumber Soup - cooking recipe
Ingredients

1 lb cucumbers, peeled and grated
1 clove garlic, crushed
1 tsp cumin
2 cups low-fat natural yogurt
1/2 cup chicken stock
1/3 cup chopped pistachios, to garnish
None None snipped dill, to garnish
Preparation

In a food processor, place cucumber, garlic, cumin and yogurt. Process until smooth. Stir in chicken stock, adding more if soup is too thick. Season to taste. Chill.
Serve topped with pistachios and dill.
