Spicy Couscous Meatloaves - cooking recipe

Ingredients
    2 oz couscous
    1 1/2 lb ground lamb
    1 None small red onion, grated
    1/4 cup korma curry paste
    1 None egg, lightly beaten
    2 tbsp currants
    1 None apple, thinly sliced
    1 None carrot, shredded
    1/3 cup fresh parsley leaves
    1 tbsp lemon juice
    1 tbsp extra-virgin olive oil
    1 tbsp extra-virgin olive oil
Preparation
    Preheat oven to 350\u00b0F. Line 4 - 8 oz mini loaf pans with parchment paper.
    Combine couscous with 1/3 cup boiling water. Cover and set aside for 3-4 mins. Fluff with a fork to separate grains. Add ground lamb, onion, curry paste, egg and currants. Season. Press mixture into pans and cover with foil. Bake for 20 mins then remove foil and bake for another 15-20 mins, until cooked through.
    Meanwhile, for the salad, toss together carrot, parsley, lemon juice and olive oil. Season. Slice meatloaves and serve with salad.
