Passionfruit Curd, Lime Curd And Blood Orange Curd - cooking recipe

Ingredients
    None None For the Passionfruit Butter
    5 None passionfruit, pulp scooped out
    1/3 cup lemon juice
    3/4 cup sugar
    13 tbsp unsalted butter, cubed
    4 None large eggs, lightly beaten, strained through a sieve
    None None For the Lime Butter
    1 cup plus 2 tbsp sugar
    1/2 cup lime juice
    1/4 cup lemon juice
    13 tbsp unsalted butter, cubed
    4 None large eggs, lightly beaten, strained through a sieve
    1 tbsp finely grated lime zest
    None None Green food coloring
    None None For the Blood Orange Butter
    1 cup plus 1 tbsp sugar
    4 None large eggs, lightly beaten, strained through a sieve
    13 tbsp unsalted butter, cubed
    1 cup blood orange juice
    1 tbsp finely grated blood orange zest
Preparation
    For the passionfruit curd, combine ingredients in a medium heatproof bowl over a medium saucepan of simmering water. Stir until mixture thickly coats the back of a wooden spoon. Remove from heat immediately.
    Cool bowl in sink of cold water, stirring occasionally, for 10 mins, to stop cooking process. Pour into hot sterilized jars and seal.
    For the lime curd, combine all ingredients except zest and food coloring in a medium heatproof bowl and prepare as per passionfruit curd. Stir in zest and coloring before pouring into jars.
    For the blood orange curd, combine all ingredients except zest in a medium heatproof bowl and prepare as per passionfruit curd. Stir in zest before pouring into jars.
