Damper (Traditional Australian Soda Bread) - cooking recipe

3 1/4 cups self-rising flour + extra, to dust
4 tbsp butter, diced
1 cup milk
None None cheese, to serve
None None chutney, to serve
None None cold meat, to serve
None None pickles, to serve
Preparation

Preheat oven to 400\u00b0F. Grease a baking tray and sprinkle with flour. Sift together flour and 1 tsp salt. Cut in butter until mixture resembles breadcrumbs. Add milk and 1/4 cup water. Mix until dough comes away from sides of bowl, adding more flour if necessary.
Turn out onto a floured work surface and knead lightly. Shape into 2 - 4 inch loaves. Transfer to prepared tray and bake for 20 mins, until bottom sounds hollow when tapped. Serve with cheese, chutney, meat and pickles.
