Lentil And Vegetable Soup - cooking recipe
Ingredients

2 cups vegetable stock
2 oz french green lentils
1 clove garlic, minced
1/2 stalk celery, leaves picked, stalks chopped coarsely
1 None carrot, chopped coarsely
2 oz mushrooms, chopped coarsely
2 tbsp coarsely chopped fresh flat-leaf parsley leaves
Preparation

Combine stock, lentils, garlic and celery leaves in a small saucepan. Bring to a boil then reduce heat and simmer, covered, for 20 mins, or until lentils just soften. Discard celery leaves.
Add chopped celery, carrot and mushrooms. Bring to a boil then reduce heat and simmer, covered, for 15 mins, or until vegetables are tender. Stir in parsley.
