Southern Fried Chicken - cooking recipe

Ingredients
    20 None chicken drumsticks
    1 cup buttermilk
    1 cup flour
    1/4 cup Cajun seasoning
    1/2 cup vegetable oil
    4 tbsp (1/2 stick) butter
Preparation
    Combine chicken and buttermilk in a large bowl. Cover; refrigerate for 3 hours.
    Drain chicken; discard buttermilk. Combine flour and Cajun seasoning in a large bowl; toss chicken in mixture to coat. Cover; refrigerate for 30 mins, or until flour forms a paste.
    Preheat the oven to 450\u00b0F. Heat oil and butter in a large, deep skillet on medium heat. Shake excess paste from chicken back into bowl. Fry chicken, in batches, until browned and crisp.
    Place chicken on wire rack over a baking pan. Cover; roast for 15 mins. Uncover; roast for 10 mins, or until cooked through and crisp.
