Prosciutto-Wrapped Pork Tenderloin - cooking recipe

Ingredients
    1/4 cup fresh breadcrumbs
    1 tbsp fresh sage leaves, chopped, plus extra, for garnish
    4 slices prosciutto
    1 lb pork tenderloin
    2 tbsp olive oil
    4 None red potatoes, peeled, cut into 1/3 inch slices
    4 None zucchini, sliced into thick rounds
Preparation
    Combine breadcrumbs, chopped sage and 1/3 cup water. Set aside.
    Arrange prosciutto on a cutting board, slightly overlapping, to same length as pork tenderloin. Distribute breadcrumb mixture along center. Top with pork. Wrap prosciutto over to enclose. Use toothpicks to secure, if necessary.
    Heat 1 tsp oil in a nonstick frying pan over medium heat. Fry extra sage leaves for 30 seconds until crispy. Drain on paper towels.
    Add pork to pan. Cook for 3-4 mins, turning, until browned. Add potatoes and zucchini. Drizzle with remaining oil and season to taste. Cover and cook for 10-15 mins, or until pork is cooked to your liking. Remove pork from pan and let rest in a warm place for 5 mins.
    Continue to cook potatoes and zucchini until golden and tender, tossing frequently.
    Slice pork and arrange on serving plates along with potatoes and zucchini. Top with fried sage leaves.
