Tuna, Bean And Radish Couscous - cooking recipe
Ingredients

1 1/2 cups reduced sodium chicken stock
1 1/2 cups couscous
1 can (15 oz) lima beans, drained and rinsed
8 small red radishes, scrubbed and thinly sliced
1/2 cup chopped flat-leaf parsley
3 cans (5 oz each) tuna in springwater, drained and flaked
2 tsp finely grated lemon peel
1/4 cup lemon juice
1 tbsp vegetable or olive oil
Preparation

Bring stock to a boil in a medium saucepan on high heat. Remove from the heat. Stir in couscous. Cover. Let stand for 5 mins or until liquid is absorbed. Using a fork, fluff and separate grains.
Spoon couscous into a large bowl. Add beans, radish, parsley, tuna and lemon peel; stir to combine. Whisk lemon juice and oil in a small bowl. Season. Pour over couscous mixture; stir to combine. Serve.
